Rather than wondering what the height should be. I would suggest:
1. Decide the size of your screen
2. Decide the location, height from floor, you want, or need to mount your screen
3. Mount the projector so that height wise the lens aligns the vertical centre of the screen, distance from screen should reference factory suggestion and actual room concern.
4. Lower the projector as much as aesthetically and logistically possible so that the centre of the lens aligns to the vertical and horizontal centre of the screen, i.e., dead centre of the screen. This way you invoke the least amount of horizontal and vertical lens shift of your projector, and ensure the best optical quality is used. The lowest point your projector can go should be the optimum height position in most cases.
